Ethylene gas is given off by all living plants -- and especially by fruits, vegetables and flowers -- and is a chemical signal to quickly speed up ripening. The release of this gas is thought to be a mechanism used by plants to promote the uniformity of fruit ripening or flowers opening, etc. The uniformity of these events attracts the maximum number of pollinators or seed disseminators (such as birds) when all the fruit is ripe or all the flowers are open in nature.
